8.將加工好的食材碼放在配菜盤內備用；
9.煎鍋中淋入適量蔥油將老薑煸香。
10.加入加工好的青魚段 。
11.蓋上鍋蓋（避免水分過多蒸發） ，用文火煎烤青魚段 。
12.待青魚段外層濕澱粉起殼微黃時，將其翻身 。
13.青魚段翻身後 ，蓋上鍋蓋（避免水分過多蒸發）繼續文火煎烤 。
14.將青魚段二麵均煎製成微黃色 。
15.待青魚段二麵微黃時加入芹菜段，並將火焰略調大 ，將青魚段澱粉層煎烤成金黃色脆殼 ，芹菜煎烤至七成熟即可裝盤 。
16.裝盤 ：先將金黃色形如金牌的青魚段碼放在盤中 ，留出中間小方塊 ，形成‘古銅錢’狀 ，然後，將芹菜碼放在‘古銅錢’口中即可上桌。
