Sweet potato toast has plenty of fans, who love the dish for its taste, nutritional value (especially its abundance of beta-carotene), and its ability to adapt to nearly any diet -- that's right, you finally have a brunch option with no gluten, meat products or dairy.
To make the toast de rigueur, bake thin slices of sweet potato in the toaster oven, oven or even toaster until crispy and then go crazy with toppings.
